I frikkin love pie.
infact i am going to be honest here and admit that i am eating some frikkin pie -- store bought- well bakery bought from a local farm just down the street from stoney ridge--- pfff yes i know, but i am allowed to taste test others -- its raspberry tho- and its like so so ... so so tart- i love raspberries in anything! right now with a scoop ice ice creamer aww thank you GOD i might just almost be in heaven.
so uh ya...... my tarte tatin:

uh i mean you know-- motley crew-- " kick start my heart???" .. haha
no sheesh- so the tart tatin i made uh.... was a hit- 10/10 at the winery - annnnnd now i am bought into supplying them for our new french cuisine menu this Thanksgigiving weekend .. what have i gotten myself into?????
They want 10 , 10 inch tarts for friday.
i compromised with 8.
i can fit 4 in my oven at a time.
thats two batches.
pray for me.
( the workers may be few BUT the harvest is plentiful :))
