Hello Y'all! So today I am a bit giddy. I awoke with an incredible joy in my heart and also this song "lifes been good" ( joe walsh- eagles... http://www.youtube.com/watch?v=_CUyxDj-a-o ) and i just cant put it in words. Today was Wednesday and on Wednesday I work with some of my clients at a sweet ladies ONLY gym. I think i get giddy because all of the yummi mummis. My clients always bring their babies with them and they are just oh so precious li'll bundles of joy and love. This keeps my heart fertile for so so much more love- i get kinda faint cause Kids seriously make me smile. I hope to have a whole littler one day. except i first need to start with the most important for reproduction, the opposite sex worthy to be my husband. I have a long way . But for now this is ok. in its time. In gods time.
Wednesdays are hump day- and this means that two more days till the weekend- Wednesdays are a peak- I went for a great spin-a -roo with moms as the evening sunset was glorious tonight.
I also designed a sweet dinner i am going to share with you.
So I love to barbecue. If i could i would bbq 365 days of the year let me tell you this is for sure. One thing i like to always keep on hand in the freezer is a whole chicken. You can always get them really cheap at the supermarket- even the de-graded ones... they are special too.... sometimes they might be missing a wing or something not important - but that's ok- they cant get away on ya! whole chickens are great because you can also get allot of food out of one chicken- a few meals if you make soup with leftovers!
So i decided to try something new today- "Smashing chicken" i called it because it really was Smashing! like darling you look smashing......
1. i took my whole chicken and cut open the back side and flattened it out so she was double breasted and opened up like a book- sometimes you have to de-joint the legs and wings so it all evens out flat and smooth. you will see what i mean in the picture. Keep the skin on cause this keeps the juices in and covers as a nice cozy blanket to keep the meat tender an juicy on the barbie.
2. I then marinade the beauty in a " milk and honey marinade" *secret ingredient* yogurt ( or buttermilk- but it is much richer) mint, thyme, oregano, lemon twist, honey, salt and pepper. simple but just you wait until you see how tender she comes out.
3. Take a BRICK- yep. a brick. This is the smashing part - soak it in water and cover it in foil. put on bbq first to heat it up for a good ten minutes- you are going to season again the chicken flesh side with olive oil and salt on the fatty skin so it will not stick but get a crunchy crust. Flatten out the entire chicken even on the Barbie FLESH side down and place heated brick on top. Cook for about 30-40 minutes on med/low slowly-- not too fast or she will char too soon! And look at the crust you get on her- but she will be so tender inside.

The next dish i did was a Confetti pasta- Are You Ready Confetti Pasta! I call it because i have had these incredible fresh "fay-tuh-CHEE-nee"---- fettuccine noodles that remind me of beautiful streaming ribbons- ad in some different shapes and sizes of ingredients and you have a confetti of a pasta! Fiesta pasta really. Pasta like you would want to throw at a wedding its so beautiful and light! my inspiration is pretty self explanatory-
In my fresh pasta i used even more fresh on the scale of fresh ness for ingredients all in our harvest here.
***olive oil, Fresh Garlic, Snow peas, vadalia onion, red pepper, fresh corn, arugula , splash of whipping cream, garlic stuffed olives, Fresh Parm and sprinkling of Parsley!-- an ingredient so so so under-ratted-- parsley is AMAZING-- ( great for fighting bad breath....just don't get it stuck in your teeth. Thats embarrassing.)
toss em all up and voila- Good twist on the fork here.
A lovely light delight to accompaniment the Smashing chicken. or sorry smashed chicken.
Serve with a hefty bowl of greens and a glass of fine "grape juice" and you have a whole hearty meal.

ok one thing pre-requisite to eat this divine fine meal- is a heart earned workout. Moms and I try to get in a few rides in together a week. cant say we finish the ride together. but we defiantly start together... sorry mom.... My moms a pretty incredible woman. She is my best friend and a real heart warrior. I have attached a few shots of todays ride and then since i was a young one- with my first pink bike. Today I still have a pink bike. :) During my cycling career my mom was the first woman who said to me "CYDNEY you can do all things thru christ who gives you strength!!" i remember this was a day i was in a stage race down in Vermont youngest in the team- perhaps the tallest- and a bit insecure about my size. The day she spoke this over me- was the day I won my first QUEEN OF THE MOUNTAIN Jersey in a stage! This was an incredible feeling i will never forget. Its also a pretty memorable memory i have as a cyclist- because-- really with god all things are possible-- understanding that IN HIM- WE CAN DO ALL things-- thru him we can do all things- because of his strength being perfected in us continually!! and this is so simple to always have on the top of your head to apply to Everything! God has already given us the victory- in him! thru him! EVERY THING

Well this is about it for now. I hope i have inspired you to try smashing them chickens!-- on the barbecue that is! Remember that Gods perfect Love Drives out fear- so have no fear! Give her a go!
